Summertime is starting out HOT here in Coeur d'Alene, Idaho. Our little resort town by the lake is sizzling in the high 90-100's this week. We spend our days on the lake enjoying the cool water, or out early to walk & bike, then inside with the air conditioning on.
Maybe it's to balance my sizzing hot SFR, but I'm always trying to come up with something cool and refreshing for summer suppers. So here's my offering for the Cafe;
'Cathryn's Lemon-Dill Coleslaw Salad'
This summer salad is delicious with chicken, fish or burgers. Keeps well in tightly closed container in frig.
Into large bowl,
Slice or shred 1 medium head of green cabbage (bagged slaw works great too)
Add thinly sliced and chopped
1/2 of a cucumber
1/4 c sweet or green onion (I also add chopped chives from my herb bed)
radishes
sugar snap peas
carrot
cherry tomatoes, whole or halved
Dressing: 1 cup mayonnaise (lite mayo is great)
juice of lemon to taste
minced fresh dill or squeezed tube dill (look for this in your grocer's produce refrigerated section)
salt & pepper to taste
